My Recent Healthy Eats 9

Happy Easter everyone! This is an Easter weekend unlike any other for me because I’m spending it with my entire family which hasn’t happened in almost 15 years! Watching my nieces and nephew hunt down Easter treats this morning and having dinner with my whole family last night was incredible. I hope you are having equally wonderful Easter celebrations! I’ll keep today’s post brief so you can get back to spending time with your loved ones!

If you’re new to My Recent Healthy Eats, it’s where every couple of weeks I recap some of the healthy things I’ve been eating recently. 1. Vegan peanut butter & banana green smoothie

I can’t even tell you how excited I am to bring you this recipe in a couple of weeks. This peanut butter and banana smoothie made with Vega’s Protein & Greens is so incredibly delicious and I can’t wait to share it with you all! 2. Sweet potato and fennel curry

This sweet potato fennel curry from Healthful Pursuit is a favourite of mine. If you’ve never cooked with fennel before, don’t be scared of it, it’s great! You can buy a bulb at just about any grocery store. It smells like black licorice and has the consistency of a cross between an onion and celery when it’s cooked. It’s super flavourful and nutritious! When I make up this recipe I add in a couple of other vegetables like mushrooms and kale to the cooking fennel just because… #alltheveggies! This chickpea fennel curry tastes just as good cold as warm so it makes a perfect on-the-go lunch.

3. Cauliflower tabbouleh

Angela at Oh She Glows is pretty much the queen of vegan recipes. I’ve made so many meat-free meals from her blog and every one is a winner! This detox cauliflower tabbouleh is no exception. My friends and I had it for dinner the other night and dressed it up with some chickpeas and hemp seeds to make it stand as a meal on its own and it was delicious! I will definitely try to recreate what I did and share it with you here in a few weeks.

4. Carrot salad and baked salmon

Oh simple meals, how I love thee. I baked this salmon the same way I did a couple weeks ago and then paired it with a super-simple carrot, toasted walnut and raisin salad that I will be sharing the recipe for with you next week. So stay tuned for that because it’s going to be delicious!
