My Recent Healthy Eats 8

Sorry for the delay on this one friends! I try to get My Recent Healthy Eats up on Fridays but this past week got unexpectedly packed at the last minute. There’s still lots of time to get inspired by what you see here though and maybe whip something up for your meals this coming week!

If you’re new to My Recent Healthy Eats, it’s where every couple of weeks I recap some of the healthy things I’ve been eating recently. 1. Baked potato wedges

Unfortunately because of the way they’re traditionally served — deep fried in trans-fats or loaded down in sour cream and bacon bits — potatoes have gotten a bad rap and are considered by many to be unhealthy. But they’re not! If cooked properly and consumed in a reasonable portion, potatoes are actually great for you! Potatoes are an excellent source of vitamin B6 — which is crucial for the formation of virtually all cells in your body — as well as being a good source of vitamin C and potassium. So if you like potatoes, don’t feel like you can’t have them! Simply do what I do — toss them in coconut oil, a sprinkling of onion powder, garlic powder and Himalayan salt and bake them in a 375F oven, turning regularly until crispy. Enjoy a few as a snack or with your meal!

2. Turkey, cabbage and kale

This one-pan meal inspired by something I saw on Leanne Vogel’s Instagram account a long while ago is a perfect example of how easy it is to toss together a healthy meal that will last you for days. I cooked up 1lb of naturally-raised ground turkey in coconut oil and taco spices (I used 1/4 of this taco seasoning recipe from Wellness Mama — though if you like it spicy you could likely use closer to half), added as much sauteed cabbage as my large pan could handle, waited a couple minutes and then added as much shredded kale as I could squish in. Cooked that all down and voilà! 3-4 meals for the week in less than 30 minutes!

You guys must be so sick of my butternut squash soup recipes. I shared a butternut squash and sautéed shallot recipe in My Recent Healthy Eats’ Christmas edition and then a five-spice butternut squash soup recipe last month. It does not surprise me that I have another one. Puréed soups are just so comforting and it’s easy to pack a ton of nutrients into one bowl! This time around it was a butternut squash and carrot soup inspired by Farmers To You. I followed the recipe pretty closely with the addition of my homemade bone broth (though you can of course use vegetable broth for a vegan version) and 1/2 cup of full-fat coconut milk for extra creaminess. Another great puréed soup for you to try out!

4. Salmon and roasted veggies in five-spice powder

Have you tried five-spice powder? My goodness is it good! It’s a mix of cinnamon, cloves, fennel, star anise and szechuan peppercorns that is so incredibly flavourful. I marinated the salmon in coconut aminos, lucuma powder, olive oil and Himalayan salt for a few hours and then baked it in the oven. For the veggies I tossed fresh fennel, zucchini and mushrooms in coconut oil and five-spice powder and roasted them, stirring occasionally until tender.

5. Vegan nut and seed bars

If you haven’t tried my sugar-free, grain-free vegan nut and seed bars yet I really think you should. (I know, I’m biased!) I didn’t know what to do for breakfasts a few weeks ago and had a lot of nuts and seeds lying around so decided to whip these tasty bars again. They are just such a satisfying and nutritious way to start the day. So if you haven’t made them yet, I highly recommend it!
